Production Stages

Harvest

There is no stage more crucial to superior oil production than that of the harvest. This process will determine the quality of the final product so timing and harvesting method are of paramount importance to the diligent olive oil producer. This is why we collect the fruit shortly before it reaches full maturity, taking into consideration optimum weather conditions, using the right tools and materials, aiming at the best possible quality in our product.

Selection

Protecting our trees and natural environment, we carefully handpick the fruit. This is a time for the entire family to come together. Following the harvest, we join in clearing up leaves, branches, soil, and other materials. Deeply rooted in antiquity and tradition, this process symbolizes our family legacy, honoring the land, our customs, and the sacred olive tree, in a way that is pure and natural.

Transport

Selected olives are carefully placed in jute bags which will allow them to breathe and are ideal for the protection of the fruit since their soft weave will not injure the content. With no time to waste, they are transported to the mill to be swiftly processed and give us the finest oil possible with the highest quality characteristics.

Cold extraction

We choose the cold extraction method in our production as it yields a superior quality product, avoiding any degradation brought on by increased temperatures.

Analyses

We guarantee that our oil meets the highest and strictest quality standards of the market, by performing all the necessary chemical and organoleptic analyses.

Storage

Our olive oil is then stored in our state-of-the-art warehouses, inside stainless-steel tanks with nitrogen supplement. This is the best way to store oil, maintaining its high quality and keeping it safe from any alterations, thus, preserving all of its wholesome nutritional elements.

Standardization

The packaging and standardization of olive oil are as essential as its production process. With this in mind, we have chosen a Greek family-run standardization company, with a decade-long tradition in Extra Virgin Olive Oil, bearing all required certifications (BRC, IFS, Kosher, TUV), in full compliance with all necessary protection measures.

Distribution

Our extra virgin olive oil is now ready to be distributed around the world, finding its way to your table so that you can enjoy it with your loved ones.
